I think this bold lineup could win NCAAs next season but wouldn't come close to the points record set this year.

At least in the US...I'm not familiar with international sports. Penn State wrestling's current run (11 out of the last 13 contested championships) is better than the Tom Brady Patriots, the Golden State Warriors, the late 90s-2000 Yankees, etc.
Our only data points are the Soldier Salute where he narrowly won (lost) to Zach Glazier who ended up going 1-2 at NCAAs. Would he have won 197 or HWT?
The most impressive stats here are the fact that lower seeded Penn State wrestlers are more likely to win than their higher seeded opponents in the semis and finals. This means in-match coaching and gameplanning are making the difference.
What will never happen again? I'm a Penn State fan and I think someone else will have a 4x undefeated career just like Cael. I certainly think someone else can win 4x titles at 4 weights (especially since there's no requirement to be undefeated).
What evidence is there that Dake wasn't at his natural weight? He grew throughout his 4 years of college and hence bumped up weight classes. It's not like he shrunk down to his "natural" weight after he finished competing in college. He wrestled the optimal weight for his body as he grew.
