Idk. Keeping momentum seems like a real thing. If you score at the end of the first and ride out, going down immediately to keep the ball rolling and stretch the lead seems like a strategic advantage. Something about 4 - 0 on the scoreboard is confidence building ..  one more takedown and you're close to a major. Whereas, if it's 3-0 at the end of the first, the other guy goes down, and then escapes, he's making a comeback. 

Might sound like bs, but that's how it worked in my pea brain.

How about the same approach for first and second period?

The same wrestler could have choice both periods.

Winners win more.

Absolutely.  Especially between opponents at an equal level.  Say wrestler A goes into the 2nd period with a lead 3-1 or 3-0.   He can defer knowing he'll go on top & if he can achieve building riding time he'll force wrestler B to cut him loose early in the 3rd period.  Theoretically wrestler A is up 4-2, 4-1, or even 4-0 with riding time(essentially making it 5-0) with all the advantages in the 3rd.  

Theoretically I already pinned him and it doesn't matter.
