It seems to me, that with both using similar strategic programming we would be saddled with an inordinate number of OT's, 1-0, and 2-1 bouts except for those where one opponent is clearly dominant.  NCAA championships would become boring.

Good point. Ideally, something like AI would force wrestlers to switch things up and expand their style out of their comfort zones since that would give them an advantage over the analytics. But if baseball is any indication, moneyballing wrestling will probably result in more boring matches as you predict.

In a tournament setting, you would need to have access to a report for every possible opponent and then adjust your mat strategy accordingly.  The human element is you would still need a partner to be able duplicate the technique to give you the right look to counter.
